Nuts About Slice

I grew up eating a lot of slice. My mum would make it for our morning and afternoon tea and we would always have some in the fridge in case any unexpected guests dropped in. I can't say that all of them (or any of them) were very healthy but every time I eat slice I have fond memories of my childhood. So today I decided to attempt a healthier version of a Pistachio slice that my mum used to make. You could probably use any nuts in this recipe but I used what we had in the pantry which was Almonds and Pistachios...
  • 1 cup Almonds

  • 1 cup Pistachios

  • 1 tablespoon maple syrup

  • 2 tablespoons honey (or rice malt syrup)

  • 1 teaspoon vanilla bean paste

  • 1 teaspoon salt

  • 80g of dark chocolate (I used 70%)

  • Line a small baking tray with baking paper

  • Blend almonds and pistachios in a food processor until they form a crumb

  • Add maple syrup, honey, vanilla and salt and blend until combined.

  • Add mix to baking tray and flatten to fill (my baking tray was too big so I lined with gladwrap to fill half of the tray)

  • Place in freezer for about 30 minutes

  • Melt chocolate in microwave or bain-marie and pour on top of slice evenly

  • Place in fridge to set

  • Voila!
