Rice paper rolls are a simple, cheap and yummy lunch time snack that are one of my faves. You could mix up which protein you use but I personally like prawns in mine. I use a pre-mixed salad from Woolleys because I'm lazy but it would be quick to chop up some veggies individually and chuck them in!
Ingredients for 2 rolls:
Mixed salad (I buy a mixed salad that has carrot, celery, mixed leaves and capsicum already in it)
Half an Avocado
6 small cooked prawns
Rice paper wrappers
Mint or Coriander
Hoisin Sauce (for dipping)
Method:
1. Dampen the rice paper wrappers (follow the instructions on the packet)
2. Once the sheets are soft, place a handful of mixed salad, a quarter of an avo, some mint or coriander and three prawns on each.
3. Roll both sides in then roll up into a tight roll.
4. Serve the Hoisin sauce in a small ramekin for dipping.
