Raspberry and Pistachio Cookies


I LOVE baking but the problem with having a home business is that the fridge is way too accessible!! I figured out that if I can't be trusted with baked goods in the house, I should at least try and make them healthy... most of the time. Try these raspberry and pistachio cookies as a healthy snack for the family. Gluten free, dairy free and sugar free but very very TASTY!

Ingredients:

  • 3 cups almond meal

  • Fresh raspberries

  • 1/4 teaspoon salt

  • 1/2 teaspoon baking powder

  • 1/3 cup honey

  • 2 tablespoons coconut oil (melted)

  • 1 egg

  • 1/4 cup of pistachios chopped (any nuts will do!)

  • 1 teaspoon cinnamon

Method:

  1. Preheat oven to 180 degrees celcius

  2. Line baking tray with baking paper

  3. In a large bowl mix the almond meal, salt and baking powder

  4. In another large bowl mix the egg, honey and coconut oil

  5. Create a crater in the almond meal mix and pour in the wet mix, stirring until even consistency

  6. To form cookies, spoon a tablespoon of mix into your hand, flatten, sit raspberry on top and gentle press around edges until completely covered

  7. Using both hands, roll into balls and place onto baking tray (see picture above)

  8. Dampen the top of each cookie lightly with water then sprinkle on the nuts and dust with cinnamon

  9. Bake 12-15 minutes then allow to cool before eating

  10. ENJOY!
