It can be a struggle to find a healthy breakfast option if you don't eat eggs or have time to cook something in the mornings. Granola is a great one to whip up in bulk on a Sunday and set aside for each day. You can even pop it into jars with yoghurt and berries and then snack on it when you get to work. Here is my Gluten-Free Granola for you to try!

Ingredients:
1 cup Coconut 1 cup Quinoa 1 cup Almonds (can vary to taste) 1 tablespoon Cacao Nibs 1 tablespoon Chia Seeds 1/2 teaspoon Chinese Five Spice (any spice will do) Honey, Maple Syrup or Rice Malt Syrup--> add until the mixture thickens.
Ingredients can be altered and you can add other nuts or coconut. This was just what I had in the pantry :-)
Method:
Heat the oven to 160 degrees celcius
Line a baking tray
Mix all ingredients in a bowl (make sure honey is mixed through well)
Spread evenly onto tray
Toast until nice brown colour (approx 10-15 minutes)
Set aside to cool
Keep in airtight container
Enjoy!
