One of my clients was talking to me today about how she went to a cafe for coffee and there were no healthy or bite sized snacks available. I made these balls in about 15 minutes and all it took was a few simple ingredients and some time to figure out how much of each I should blend together. We are becoming a more health conscious society and I think all cafes should have something to offer their customers that isn't sugar filled and could feed an army of ten! I chose the cheaper option today with two of these babies and a homemade coffee. It was almost as satisfying as heading to my local cafe... almost.
Ingredients:
15 dried dates (you could use fresh but I didn't have any)
1 cup of quinoa flakes (could be replaced with almond meal)
1/2 cup shredded coconut (plus some extra for rolling)
1/3 cup cocoa powder
1/3 cup of coconut oil
1 teaspoon of soaked chia seeds
Method:
Blitz dates into small pieces.
Add the other ingredients to food processor and blitz.
Roll into balls and then roll in coconut
Voila!
