I've always enjoyed Sarah Wilson's recipes but one of my friends started her 'I Quit Sugar' journey recently and told me about these 'Not quite Cherry Ripe' balls. Inspired by these delicious morsels, I tweaked the recipe with ingredients I already had in the pantry. Very quick to whip together and would be great to make with the kids on a rainy day. Have a try and see what you think!
Ingredients:
1 1/4 cup shredded coconut
1 tablespoon coconut oil (melted)
1 tablespoon maple syrup
1/2 cup frozen raspberries (could use any berries for a different flavour)
1 drop vanilla bean paste
1 tsp vanilla bean
1 1/2 tablespoons greek yoghurt
1 cup of dark chocolate (I used 86%)
Method:
Line a baking tray with baking paper
Blend all ingredients together in a food processor
Roll tablespoon sized balls and place them on lined tray
Set in freezer for at least 1 hour
elt chocolate (microwave or a bain-marie)
Coat the balls in chocolate and set in fridge
Enjoy!
