Anything with chocolate in it I'll eat, let's be honest so when I bake cookies I try to use healthier ingredients so as it's not so bad when I eat most of them in one sitting... Half kidding ;-) These are actually really tasty and I love the hint of cinnamon! You could even try adding some raisins if you're into that.
Ingredients:
1 cup oats
1 cup almond meal
1/2 teaspoon baking powder
1 teaspoon cinnamon
pinch of salt
1 teaspoon of vanilla
1 large egg
1/2 cup of maple syrup (could use honey or rice malt syrup)
2 tablespoons of melted butter
1/2 cup dark choc chips
Method:
Preheat oven to 180 degrees celcius
Line two baking trays with baking paper
Combine oats, almond meal, baking powder, cinnamon and salt in a mixing bowl
In a separate bowl add melted butter (cooled slightly), whisk in vanilla then the egg, then the maple syrup
Add wet ingredients to dry ingredients and mix until just combined.
Fold the chocolate chips through the mixture
Refrigerate for about 30 minutes.
Roll into balls using your hands and then place on tray and press down lightly if needed
Bake in oven for about 12 minutes or until browned
